Texas Smoked BrisketBrisket · 10 to 14 hrs+
A Texas tradition. A mustard coating, salt and pepper, low heat and patience.
You'll need
- 1 brisket, 10 to 14 lbs (or a half brisket)
- About ¼ cup yellow mustard
- 1 tbsp Worcestershire sauce (optional)
- Equal parts coarse black pepper and kosher salt, plus 1 tbsp garlic powder
- Butcher paper
How to
- Trim the fat cap to about ¼ inch and pat the brisket dry.
- Mustard coating: stir the Worcestershire into the mustard and rub a thin, even layer over every side with your hands, just enough to make it tacky. It helps the rub stick and builds a better bark, and you won't taste the mustard after the smoke.
- Season heavily on all sides right away, pressing the rub into the mustard. Let it sit 15 to 20 minutes while your smoker comes up to temp.
- Smoke at 250°F, fat side up, until the bark is dark and the inside reads about 165°F.
- Wrap tight in butcher paper and keep cooking until it probes like butter, around 200 to 203°F.
- Rest at least 1 hour in a cooler wrapped in towels. Slice against the grain.

Tips for ranch beef
Thaw it slow
Move beef from the freezer to the fridge a day or two ahead. Vacuum-sealed packs can also thaw in a bowl of cold water in about an hour.
Bring steaks to room temp
Let steaks sit out about 30 minutes before cooking so they cook evenly.
Use a thermometer
Medium-rare 130°F, medium 140°F, ground beef 160°F.
Always rest it
Rest steaks and roasts 5 to 10 minutes so the juices stay in the meat.
